Round vs. Square vs. Rectangular: Which Cake Pan Should You Use?

Walk into any kitchen store and you will find cake pans in dozens of sizes and shapes: round, square, rectangular, springform, bundt, and more. For experienced bakers, choosing between them feels instinctive. For everyone else, it raises a genuinely confusing question: does the shape of the pan actually matter? The answer is yes — significantly — and understanding why will change how you approach every baking project.

How Pan Shape Affects Your Bake

The shape of your pan determines how the batter is distributed, how heat travels through it, and how quickly the edges set relative to the center. Round pans distribute batter evenly from all sides, meaning heat travels relatively uniformly toward the center. This is why round pans are the classic choice for layer cakes: the result is even, consistent layers that are easy to stack and frost.

Square and rectangular pans have corners, and corners conduct heat differently than straight edges. Batter pushed into corners tends to set slightly faster, which is why the corners of brownies and sheet cakes are always a bit more done than the center. This can be a feature rather than a bug — many bakers deliberately use square pans to get more of those coveted crispy edge pieces — but it does require you to adjust your expectations and keep an eye on doneness toward the edges.

Rectangular sheet pans maximize surface area relative to batter depth, which is excellent for dense, moist cakes that benefit from more even heat distribution and faster baking. They are also ideal for cakes that need to be cut into specific portions for large events.

Converting Between Pan Shapes

Here is where most home bakers run into trouble. A recipe written for a 20 cm round pan cannot be directly transferred to a 20 cm square pan by simply swapping the pans. A 20 cm square pan has about 27% more surface area than a 20 cm round pan (400 cm² vs. 314 cm²). Pour the same batter into both and the square pan version will be noticeably thinner — and will bake faster and differently.

When converting from round to square, you need to either reduce the batter to account for the extra space or scale up the recipe to fill the larger area properly.
